Ingredients

1/2 lemon juiced

250 g chicken filets diced or sliced

2 onions sliced

6 cloves of garlic: sliced

20 g Laos

30 g Ginger

2 Lemongrass stalks (Sereh)

2 Tomatoes: diced

4 Salam leaves

2 fresh chilli peppers sliced

Preparation method for Boemboe Bali

  1. Squeeze the juice from half a lemon and mix together with the chicken strips.
  2. Peal the Laos and ginger and remove the top layer from the lemon grass stalks. Slice the bottom part off the lemon grass stalk and add all of the items to the mortar. Grind it all together releasing wonderful flavours and aromas.
  3. Heat 2 tablespoons of oil in a wok pan and fry the onions and garlic. Add the tomatoes and tomato puree. Cook for roughly 2 minutes.
  4. Add the marinated chicken filets to the frying pan as well as the spice mixture from the mortar. Mix well and fry shortly.
  5. Now add the palm sugar, shrimp paste, salam leaves and two fresh chillies to the mixture. Leave to simmer for a few minutes.
  6. Finally add a stock cube and soy sauce and leave to cook for a few more minutes. Enjoy!
