Ingredients

3 cloves of garlic

Ginger, 2 slices

240 ml Sunflower oil

Tuft of Spring Onion

Preparation method for Chili oil

  1. Heat 1 tbsp oil in a pan and stir in the dried chilies over low heat. Be careful not to burn the chilli and give off a bitter odor. Fry with a spatula, stirring constantly, until cooked through the color changes from light to dark and a very aromatic chilli taste develops. Set the fried chillies aside and let them cool.
  2. Finely chop the garlic and ginger.
  3. Crush the chillies in a mortar. Make sure that it is not very finely chopped.
  4. Place the crushed chilies in a heatproof bowl and add the garlic, ginger, cumin powder, white pepper, white sesame and a dash of soy sauce.
  5. Heat the oil along with the star anise, bay leaves and the white part of the spring onion until lightly browned. Then strain the oil or discard the ingredients.
  6. Then gradually pour the hot oil over the chili mixture and you have your homemade chili oil.

Store the chili oil in the refrigerator or a dark place, and it will keep for at least a year.
