Gyeran mari is the Korean version of a rolled omelette, filled with colorful vegetables and perfect as a side dish for Korean BBQ. This simple and fun recipe is quick to make and adds a soft, savory flavor that pairs wonderfully with grilled meat. An ideal choice for a flavorful yet light banchan!

Ingredients
3 large eggs
1-2 tablespoons milk (optional, for a softer texture)
1 carrot, finely chopped
2 spring onions, finely chopped
1/4 bell pepper (green, red, or yellow), finely chopped
Pinch of salt and pepper
1-2 teaspoons oil, for frying
Preparation method for Gyeran mari
1. Start by preparing the vegetables: chop the carrot, bell pepper, and green onions into small pieces. This ensures that the vegetables mix well with the egg mixture, giving you a nice texture in every bite.
2. Beat the eggs in a bowl, add the milk (if desired for a fluffier result), and season with a pinch of salt and pepper. Make sure everything is well combined.
3. Stir the chopped vegetables into the egg mixture so that they are evenly distributed. This will create a colorful omelette that pairs perfectly with the mild taste of the eggs.
4. Heat a bit of oil in a non-stick pan over medium heat. Once the pan is hot, pour a thin layer of the egg mixture into the pan and tilt it so the mixture spreads evenly across the bottom.
5. Let the omelette cook until the bottom is set, but the top is still slightly liquid. Gently roll the omelette from one side to the other with a spatula.
6. Slide the rolled omelette to the edge of the pan and pour a new thin layer of the egg mixture into the pan. Let it cook briefly until it is just set, then roll the first roll over it. Repeat this process until you have a nice thick rolled omelette.
7. Remove the omelette from the pan and let it cool slightly. Slice it and serve the Gyeran Mari as a delicious side dish!
