Ingredients
- 2 tablespoons Thin Soy Sauce Superior
- 1 tablespoon Brown Rice Vinegar
- 1 tablespoon Sesame Oil
- Garnish Roasted White Sesame Seeds
2 cucumbers
1/2 red onion
1 garlic clove
1 red chili pepper (optional, for extra heat)
1 tablespoon sugar
1 spring onion, sliced
Coriander or parsley, for garnish (optional)
Preparation method for Spicy cucumber salad
1. Start by cutting the cucumbers: Cut the cucumber in half and then slice both halves into small pieces. This will give you nice bite-sized pieces that fit perfectly in the salad. Slice the red onion into thin rings and finely chop the garlic. For extra heat, slice the red chili pepper into thin rings and add it to the salad.
2. Now, make the dressing: In a bowl, mix the soy sauce, rice vinegar, sesame oil, and sugar. Stir well until the sugar is dissolved and everything is well combined.
3. Place the sliced cucumber, onion, garlic, and chili pepper (if used) into a large bowl. Pour the dressing over it and mix everything well so that the flavors can combine.
4. Let the salad rest for at least 10 minutes so that the flavors can infuse the cucumber. Just before serving, add the sesame seeds and the spring onion rings. Garnish the salad with fresh cilantro or parsley for a beautiful finish.
