Ingredients
3 cloves of garlic
Ginger, 2 slices
240 ml Sunflower oil
Tuft of Spring Onion
Preparation method for Chili oil
- Heat 1 tbsp oil in a pan and stir in the dried chilies over low heat. Be careful not to burn the chilli and give off a bitter odor. Fry with a spatula, stirring constantly, until cooked through the color changes from light to dark and a very aromatic chilli taste develops. Set the fried chillies aside and let them cool.
- Finely chop the garlic and ginger.
- Crush the chillies in a mortar. Make sure that it is not very finely chopped.
- Place the crushed chilies in a heatproof bowl and add the garlic, ginger, cumin powder, white pepper, white sesame and a dash of soy sauce.
- Heat the oil along with the star anise, bay leaves and the white part of the spring onion until lightly browned. Then strain the oil or discard the ingredients.
- Then gradually pour the hot oil over the chili mixture and you have your homemade chili oil.
Serve tip
Store the chili oil in the refrigerator or a dark place, and it will keep for at least a year.
