Ingredients

1 L chicken or vegetable broth

1 stalk of lemongrass

4 cm Galanga

<100 g mushrooms

2 chicken breast cubes

1 red onion in half rings

1 red pepper in rings

Preparation method for Christmas Tom Kha

  • Make a liter of broth and bring it to a boil along with the coconut milk.
  • When the soup is boiling add the chicken cubes, allowing them to cook.
  • Crush a lemon and add it to the soup along with the Galanga, lime leaves and the champginons. Let this boil briefly.
  • Now add the oyster sauce, half of red pepper rings and half of the red onion.
  • Let this cook for another minute and then turn off the heat.
  • Serve the soup with cilantro and slices of orange. Also sprinkle the remaining onion and pepper over soup for a festive touch.
