Coconut pumpkin stew (Ginataang Kalabasa)


1 large onion sliced

4 cloves of garlic finely chopped

1 medium yellow (kalabasa) pumpkin diced

250 ml water

Salt to taste

250 g green beans

Preparation method for Coconut pumpkin stew (Ginataang Kalabasa)

  1. Saute the onion and garlic for about a minute or until soft and fragrant.
  2. Add the diced squash and saute for 5 minutes.
  3. Pour in the coconut milk and water and stir gently. Simmer for about 10 minutes or until the squash is tender, stirring occasionally.
  4. Season to taste with salt or as needed. Add the green beans and simmer for another 2 minutes. Transfer to a serving bowl and serve hot with steamed rice. Enjoy!
