fried noodles with green asparagus

Ingredients

100 g Small green asparagus, cut into 2 cm diagonal pieces

150 g Tofu, diced

2 cm Ginger root, peeled and chopped

Preparation method for fried noodles with green asparagus

  1. Cook the green asparagus in boiling water with a little salt for 2 minutes, then drain.
  2. Bring another 2 liters of water to a boil, turn off the stove and soak the rice noodles in the hot water for 3 minutes. Then drain.
  3. Heat a dash of oil in a wok and stir-fry the tofu for a few minutes until nicely golden brown.
  4. Now add the ginger root, the asparagus and the curry paste to the wok and stir-fry for about 2 minutes.
  5. Finally add the soy sauce and noodles and stir well. If necessary, season with a little salt and pepper.
  6. Serve with a fresh green salad, if you like.
