Ingredients

8 Garlic cloves

0.5 tsp Salt

2 Shallots, chopped

400 g Romaine Lettuce

250 g Fennel

200 g Mushrooms

200 g firm Tofu

150 g Rocket

50 g Mint

20 g Parsley, coarsely chopped

Preparation method for gang jued

    Chili paste
  1. Soak the chilies in a bowl of boiling water for 30 minutes. Drain, pat dry and chop finely.
  2. Crush the garlic and salt in a mortar.
  3. Add the lemongrass, shallots, miso and chili and pound to a paste.
  4. Soup
  5. Pour the broth into a saucepan and bring to a boil over high heat.
  6. Stir in the soy sauce and chili paste. Add romaine lettuce, fennel and mushrooms and bring to a boil. Let cook for 5 minutes. Reduce the heat to low and simmer for 5 minutes.
  7. Add the tofu and cook for another 2 minutes.
  8. Add arugula, mint and parsley and cook for another 2 minutes.
