Japanese Korokke

Ingredients

500 g floury potatoes

1 large carrot

100 g mushrooms

1small red onion

1 spring onion

flour

2 eggs beaten

butter or oil for frying

1 tbsp mayonnaise

Preparation method for Japanese Korokke

  1. Boil half a kilo of peeled potatoes.
  2. Meanwhile, chop carrots, mushrooms and a red onion small - very small. You can slice a spring onion into rings for color.
  3. Once the potatoes are done put them in a bowl along with the carrot, mushrooms and onions.
  4. Mash or mash this into a puree. You will of course keep bits of the vegetables. YUMMY!
  5. Now form ovals from the mashed potatoes - or whatever shape you like. Don't make it too difficult!
  6. Put egg, flour and panko each in its own bowl.
  7. Get your potato form first through the flour, then through the egg and then through the panko.
  8. Put a layer of oil in a pan and fry the Korokke until golden brown and crispy.
  9. in the meantime, put equal parts mayonnaise, soy sauce and sweet soy sauce in a small bowl - this is your sauce!
  10. ENJOY!
