Khao Soi

Ingredients

1 jar Grilled peppers drained

3 cloves Garlic: chopped

2 shallots: chopped

1.5 tbsp Ginger grated

720 ml chicken stock

700 g skinless chicken thigh in bite-sized pieces

2 tsp dark caster sugar

1 tbsp lime juice

1/2 red onion: thinly sliced

200 g Bean sprouts

Coriander for garnish

1 Lime cut into wedges

Preparation method for Khao Soi

  1. Prepare all ingredients.
  2. Coconut milk and red pepper in the blender until smooth
  3. Put aside.
  4. Heat rice oil in a large stockpot. Add garlic and shallot and cook, stirring, until soft, about 3-4 minutes.
  5. Bake the red curry paste, ginger and chili powder for about 1 minute.
  6. Pour the chicken stock and coconut milk mixture into the pan.
  7. Then add the chicken, fish sauce, soy sauce and brown sugar to the pan and bring it to a boil. Then reduce the heat and simmer for 15-20 minutes. Stir occasionally in the pan and add the lime juice at the end.
  8. Cook the noodles according to the instructions on the package.
  9. Once the soup is ready, serve with noodles, topped with red onion, bean sprouts, cilantro and lime.
