Kulfi - Indian ice cream

Ingredients

300 ml whipping cream

90 g pistachios (60 g for in the ice cream & 30 g as topping)

optional: a few saffron threads ice cream moulds or ice cream cups

wooden ice cream sticks

Preparation method for Kulfi - Indian ice cream

  1. Chop the pistachios and small pieces.
  2. Peel the cardamom pods and crush the seeds in a mortar or with a spoon.
  3. Put the whipping cream in a bowl with the cardamom and a few threads of saffron. Whip this slightly thicker with a whisk or mixer.
  4. Add the mango puree, condensed milk and pistachios and stir again.
  5. Pour the mixture into your ice cream molds.
  6. Place in the freezer."A few hours later" Top with pistachios and enjoy a delicious ice cream or serve it as dessert. Kulfi takes a little longer to freeze, but melts a little faster than normal ice cream.

No ice cream cups on hand? Pour into a cake tin or baking dish and scoop out nice ice cream balls when the kulfi is completely frozen.
