Ingredients

2 Onions, chopped

2 red bell peppers, diced

8 Drumsticks

2 Spring Onions, cut into rings

1 Lime, cut into wedges

4 tbsp. thick full fat yogurt

15 g chopped Coriander or Parsley

Preparation method for yellow curry with drumsticks thai style

  1. First chop the onions. Cut the peppers into small cubes and drain the chickpeas and rinse well.
  2. Heat 2 tablespoons of rice oil in a wok or pan and sear the chicken thighs well on all sides. Then remove the chicken from the pan and set aside.
  3. In the same wok or pan, briefly sauté the curry paste over high heat. Add the sliced ​​onion and peppers and stir-fry for 2 minutes. Then add the coconut milk and stir well for about 2 minutes until a nice sauce forms. Now put the legs back into the pan and let them simmer in the curry for about 20 minutes.
  4. In the meantime, prepare the (basmati) rice according to the instructions on the packet.
  5. Now add the chickpeas to the curry and mix well. Let the dish warm up a bit.
  6. Cut the spring onion into rings and the lime into wedges. Serve the yellow curry with the rice and a generous spoonful of thick yogurt. Garnish with spring onions and coriander, if you like.
